I've been making this dessert for the past several celebrations. It is pretty easy and looks very impressive on the table. Forgive me for not being more specific with the measurements... sometimes I just go with the amounts that look right.
Anyway... I call it Lemon-Berry Trifle.
You'll need:
one white cake mix
one box of instant lemon pudding
one box of lemon pudding (the kind you cook)
heavy cream ( 1- 1 1/2 pints)
powdered sugar
vanilla
berries ( any combination of blackberries, raspberries, strawberries and blueberries)
some mint leaves for garnish
Bake the white cake mix according to the package,but add the instant lemon pudding.
Let cake cool completely, then cut it into one-inch cubes.
While the cake is baking, or even better, the night before, cook up the lemon pudding, so it has time to cool.
When you are ready to assemble, whip the cream, adding the sugar and vanilla to taste right at the end.
Set aside some plain whipped cream to top the trifle at the end.
Now that the lemon pudding has cooled completely gently fold it into the remaining whipped cream so you have a lemony mousse mixture.
Now you are going to layer the ingredients in a trifle bowl, or other pretty glass bowl, so we can see the creamy, fruity layers. First, set aside a few berries for the top. Now start layering with the cake, lemon mousse, berries, and continue in that order to fill the bowl. You may have some cake leftover, but that's OK because you can throw it in a ziploc and freeze it for the next time!
Finally, spread a layer of plain whipped cream over the top and place a few berries and mint leaves on top to make it look pretty.
That's it! I made it for my brother's party last weekend and it went before I had a chance to say "Hey, save some for my breakfast tomorrow!" (It tastes even better the next day.)
